Ingredients:
- 4oz CSR Smart White
- 4oz Dairy Free Margarine (Nuttlex is best, but you can make this with regular margarine if you like)
- 2 eggs
- 4oz Self Raising Flour
- Half a cup dark choc chips
- Half a small Tin of Mandarins
Method:
- Preheat Oven to 180 degrees
- Cream sugar and Marg
- Mix in eggs one at a time with a little of the flour
- Mix in choc chips and one tablespoon of the juice or syrup from the mandarin tin
- Fold in the rest of the flour (sift flour into the bowl a little at a time)
- Place the mixture in the cupcakes, and then place a mandarin piece on top of each one, just pushing it into the top of the mixture slightly (only half of a mandarin piece is needed when you are making the tiny size cupcakes)
- Bake in a hot oven, around 12 mins at 180 degrees
Note: recipe is specially formulated with people who are lactose intolerant.
